This is an attempt at sugar-free muffins, with dates replacing the usual refined sugar. I used plain flour but I’ll have a go at using coconut flour at some stage for a little extra sweetness. These worked well: the texture was suitably muffin-y and although they’re not sugar-sweet they were good enough to get the Babbit’s seal of approval.
1 tablespoon ground flaxseed
1 cup non-dairy milk – I used Koko coconut milk
1 small banana
1/2 cup dried dates, blended to crumbs
2 cups flour
3 teaspoons baking powder
2 tablespoons raw cacao powder
1 cup frozen pitted cherries
Heat the oven to 200C. Mix the flaxseed, milk, banana and dates – I used the Vitamix for this, which did a better job of turning the dates to crumbs than the Magimix already had.
Mix the flour, cacao and baking powder together in a large mixing bowl. Add the wet ingredients and stir – it should be moist but lumpy – then fold in the cherries. Fill each muffin cup about 2/3 full.
Bake for 20 minutes.
Road testing the batter – the absence of sugar did not thwart enthusiasm for the mix, which was a promising sign!
