Okra is one of those things that I love when eating out, but have never managed to get quite right at home. I always end up munching through it contemplating Lewis Carroll’s “slithy toves” and wondering if okra was what the man meant. The solution – frozen okra!
1 packet frozen baby okra
4 small green chillies, finely chopped
2 tbsp mustard seeds
1 tbsp curry powder
1 tbsp turmeric
2 onions, sliced
2 tsp cinnamon
2 tbsp lime juice
Defrost the okra (I did mine in the microwave for a few minutes), dry it thoroughly on paper towels then chop it into bite-sized chunks. Heat a non-stick pan and then add the okra. Keep it moving until it begins to brown. Then add the sliced onion, chillies, mustard seeds, curry powder, turmeric and cinnamon and keep it moving – you may need to add water, 1 tbsp at a time, to stop it sticking. Cook until the okra is cooked through and then add lime juice just before serving.
I served mine with brown basmati rice, chickpea masala from Weird Vegan Lady’s recipe, and soy yoghurt raita. Proper feast.
